Thanks to very generous colleagues, 9 of my Gingerbread houses and 50 or so cookies raised an amazing £2855 last Thursday when auctioned at work, with all proceeds given to a new initiative organising a special Christmas Day event for one hundred elderly people who would otherwise be alone. Bids went as high as £1000 for the Frozen large Amboise style house below.

Here are some pictures of my gingerbread collection this year. I designed various sizes and styles including "Amboise" based on a beautiful house I saw in the Loire Valley last month. I loved the perfect proportions of this house with its high pitched roof. At least 8 of these houses and many cookies will be sold and auctioned next week with all proceeds to a benevolent cause set up by a colleague who is organising an event to provide a special Christmas Day to a hundred elderly and isolate people who would have otherwise spent it alone. It's a wonderful cause and I hope to raise... a lot!

This recent wedding cake is decorated in Lambeth style Royal Icing. The art dates back to the Victorian times when intricate and layered designs were hand-piped on wedding cakes using a heavy meringue piped through various nozzle styles. In the 1910s-30s, Joseph Lambeth published a rare but still available compendium of this method which sealed the method as his own, although it had existed since the 1880s.
